Pancakes can be Healthy Too!

Pancakes are a popular favorite with every child and many adults too. If given the option, children can have them for breakfast, dinner, and even as a snack. While it can be a great option to fill the tummy, the traditional way of making pancakes with refined flour and eggs is not considered to be a very healthy option by many. So what do you do when your children ask for pancakes every other day? You either plead with them to eat something else, something healthier, or you shout at them and force them to eat something of your choice. There is another better option, though. You can look for healthier options of pancakes without compromising on the taste. Pancakes don’t necessarily have to be made from refined, bleached flour. We gave you a few interesting variations of pancakes, made from different types of flours.

1. Whole Wheat Pancakes

Whole Wheat in Mommywize This is probably the most popular substitution for refined flour. These whole-wheat pancakes are light, fluffy, and much healthier than regular pancakes. Ingredients •1 Cup Whole-wheat Flour •2tsp sugar •1 tbsp melted butter + extra for greasing •1 tsp Baking Powder •½ tsp Baking Soda •¼ tsp Salt •1 Cup Butter Milk •1 Egg Instructions •Mix all the dry ingredients together. •In another bowl, whisk all the wet ingredients. •Add the dry ingredients to the wet ingredients and mix. You don’t need to whip the mixture. You should have a thick batter. •Heat the griddle and grease with butter. •Pour the batter in batches and cook on both sides. •Top with maple syrup and fruit of your choice, such as bananas, berries, mangoes, etc.

2. Banana Pancakes

Banana Pancakes in Mommywize The addition of banana to your regular pancake batter can elevate the taste to another level. Apart from being absolute yum, these are also very healthy, and you can sneak in a serving of fruit too. Ingredients •1 cup whole wheat flour or refined flour •1 tbsp Baking Powder •½ tsp Baking Soda •½ tsp ground Cinnamon •¼ tsp Salt •1 tsp Sugar •⅔ cup Milk •½ cup mashed ripe banana (from about 1 large banana), plus another banana for slicing on top •1 large egg •1 tablespoon melted unsalted butter •½ teaspoon vanilla extract Instructions •Mix all the dry ingredients together. •In another bowl, whisk all the wet ingredients. •Add the dry ingredients to the wet ingredients and mix. You don’t need to whip the mixture. You should have a thick batter. •Heat the griddle and grease with butter. •Pour the batter in batches and cook on both sides. •Top with maple syrup and fruit of your choice, such as bananas, berries, mangoes, etc. Note You can substitute banana with shredded apple or apple sauce.

3. Coconut Flour Pancakes

Coconut Pancakes in Mommywize Coconut flour pancakes are a healthy and delicious option for someone who doesn’t have wholewheat flour or refined flour. Coconut flour is gluten-free and low-carb, which makes it an excellent option if your child is allergic. Ingredients •1/3 cup plain yogurt •2 tbsp Honey •3 Eggs •1 tsp Pure Vanilla Extract •2 tbsp Coconut oil (you can use butter too, but coconut oil just brings out the flavor) •1/4th cup Coconut Flour •½ tsp Baking powder •½ tsp Baking Soda •A pinch of salt •Toppings of choice Instructions •Whisk all the wet ingredients together in a bowl. •Add the dry ingredients and mix well so that there are no lumps. •Let the batter rest for 10 minutes. •Heat your griddle and grease it with butter or coconut oil. •Keep the heat on low to medium and pour enough batter for small pancakes. •Do does not make large pancakes, since these are a little tricky to flip over. •Cook on both sides and enjoy with your favorite toppings.

4. Yogurt and Oat Pancakes

Pancake with yogurt in Mommywize If you want your child to eat healthily, there is really no dearth of options. I love the earthy flavor of oats in pancakes and find this to be a very healthy treat. Ingredients •1 cup Oat Flour (You can also use oats ground at home) •1/4 cup Refined Flour or Whole Wheat Flour •1 tsp Baking Powder •½ tsp Baking Soda •½ tsp Salt •½ tsp Cinnamon •3 tbsp granulated sugar •1 cup thick Yogurt •1 tsp vanilla extract •2 Eggs, lightly beaten •1-2 tbsp milk (if needed) •Butter or coconut oil (for greasing the skillet) Instructions •Mix all the wet ingredients. •Add the dry ingredients to this and mix well to get a lump-free batter. •If the batter seems too thick, add a little more milk. •Heat your griddle to medium-low and pour a ladle of batter. •Cook on both sides. •Serve with toppings of your choice.

5. Apple Pancake Rings

This is an easy pancake batter recipe. The use of apple slices makes it interesting for children and is another way to entice them to eat something healthy. You can use any batter recipe for this, be it whole-wheat flour pancakes, coconut flour, or any other healthy option that appeals to you. Peel a whole apple, but do not slice it. Remove the core with an apple corer and then make horizontal slices. Dip the apple slices into the pancake batter and deep fry or cook on a griddle. A sprinkle of cinnamon sugar brings out the flavor and makes it taste like apple pie. You could also substitute the apple rings with pineapple rings. Most of these recipes can be customized according to your child’s taste and liking. If you don’t eat egg, it can be substituted in most of these recipes (except for coconut flour pancakes) with thick yogurt or a flax egg. You can also substitute regular milk with any vegan option that you may prefer, such as soymilk, almond milk, etc. Sugar too can be substituted with brown sugar or coconut sugar. Also, the thickness of the pancake depends on how thick your batter is. If you prefer thinner pancakes, you can dilute the batter with some milk. You can also add chocolate chips and sprinkles to the batter for your children. Blueberries are another yum option. Top the pancakes with whipped cream, honey, maple syrup, chocolate sauce, bananas, strawberries, blueberries, mangoes, and anything else that appeals to your child. If you serve them these healthy options from the beginning, they will not develop a taste for refined flour at all, and will always prefer the healthier option.
